潮州麺 武二（モウイィ）[マカオ(MACAU)]

[9点][マカオ][中華料理]

「食は広州にあり」と言われるように中国南部は料理の宝庫。ここマカオも広州の旨い料理はもちろん、統治時代の面影を残すポルトガル料理、そしてポルトガル料理に海のシルクロード各国の味を取り入れた「マカニーズ」と呼ばれるマカオ料理が有名だ。
そんなマカオの一食目は潮州麺屋の武二の「雪菜肉絲麺」。

見た目あっさりなこの一品。しかしそのスープのインパクトは抜群。ひとすくい口に含めば、様々なダシの味わいが口に広がる。麺のコシもすばらしく、スープの強さに負けていない。もちろん具となる何かの臓物も美味。臓物系が苦手な方はその姿形で遠慮してしまうこともあるだろうが、ここはぐっと我慢して、一度はチャレンジして欲しい。きっと虜になること間違いなし。

今回は麺で頂いたが、今度行くときには米粉で作った麺でいただいてみよう。日本で言うラーメンのような麺は「麺」と表記されて、米粉で作った麺は「米」と表記される。そして粥は「粥」。これだけ読めればたいてい旨いものにありつけるだろう。是非どうぞ。
